Happy ChristmaHanuKwanzFestimas! Whatever you’re celebrating, I hope you have a wonderful holiday season.

I’m super thankful I don’t have to host, but I still like to bring my Southern charm to the Midwestern table at my in-laws’ house. I recently wrote an essay for the fabulous food site Spiffy Eats and Giggle Water about how Southerners and Midwesterners think of corn very differently and how that manifests in their recipes. (I write about things other than books sometimes! Who knew! Ha.)

In it, I included a recipe for my favorite corn-based meal: corn casserole! With only four ingredients, it’s not only ridiculously easy to make, it’s also delicious.
